This dish has an unusual recipe that has remained unchanged for many years. Since Soviet times, according to GOST standards, this dessert has been made with a sponge cake base. The crust should be tender and soft, so it's important to remove it from the oven promptly to prevent the crust from becoming stale. However, if you miss this moment, you can trim a thin layer of the crust off the top and bottom.

It's worth noting that this dish is not recommended for young children, as the recipe includes cognac. It's part of the aromatic syrup used for soaking. Despite the high price of the aforementioned alcoholic beverage, this dish is quite affordable for the average family, as only 1-2 tablespoons of cognac are needed.

Making this wonderful cake at home according to GOST standards is quite simple. The recipe is so simple that even a homemaker with no sponge cake baking experience can make it, even without photo instructions. The only thing you can learn from photos of other cakes is how to decorate the dessert. However, even here, your imagination is the only limit.

So, the standard recipe contains the following ingredients:

  1. Dough: 120 g each of flour and sugar, 4 eggs.
  2. Cream: 100 g sugar, 120 ml boiled water, 20 ml cognac.
  3. Syrup: 200 g each of sugar and butter, 125 ml of full-fat milk, 2 yolks, 5 g each of vanilla sugar and cocoa powder, 20 ml of cognac, 1.5 teaspoons of jam (cherry), 100 g of fresh spinach.

Cooking process

Biscuit:

  • separate the yolks from the whites;
  • grind the yolks with sugar and beat;
  • beat the whites until stiff peaks form, then add sugar;
  • add the whites to the yolks, then add the flour;
  • grease only the bottom of the pan with vegetable oil and sprinkle it with flour;
  • Place the dough in a baking pan and place in an oven preheated to 200 degrees;
  • the biscuit will be ready in about 30 minutes;
  • Cool the sponge cake first in the pan, then take it out and leave it to rest for 7 hours.

Syrup:

  • melt sugar in water over low heat;
  • pour in cognac and leave to cool.

Cream:

  • mix milk, yolks and sugar, put this mixture on the burner;
  • constantly stirring this syrup, boil it for about 5 minutes until it thickens;
  • beat softened butter with vanilla sugar and carefully add cooked and cooled milk syrup;
  • add cognac to the resulting cream and mix again;
  • divide the cream into two unequal parts;
  • mix cocoa powder into the smaller one;
  • from the larger part of the cream, set aside 1 tablespoon in two different cups and set aside the remaining white cream;
  • add jam to one cup;
  • in the other - 1 teaspoon of freshly squeezed spinach juice.

Assembling the cake:

  • round off the top of the biscuit by cutting off the corners along the cake (these scraps should be saved!);
  • cut the cake lengthwise into three equal parts and soak each of them thoroughly with syrup;
  • Spread each layer with white cream and then spread it over the entire biscuit on top and sides;
  • crush the cut corners into crumbs and place them on parchment paper and dry in the oven for 3-5 minutes at 200 degrees;
  • take them out of the oven and sprinkle them tightly over the biscuit;
  • take the chocolate cream and spread it over the top of the cake;
  • Using green and pink cream, you can make improvised patterns as decoration.

You don't have to stick to the GOST recipe. You can vary it a bit by looking at photos of other fabulous desserts.
