The fact is, this unusual dessert is made with blackcurrant jam. You can experiment with jam, but blackcurrant jam provides the desired hue. The reaction between the jam and baking soda gives the cake a rich, dark color. Sometimes the recipe allows for the use of a little cocoa powder. Chopped nuts, cherries, and pieces of canned fruit can be added to the sponge cake batter.

for the cake:

  • 2 chicken eggs;
  • A glass of sugar;
  • A glass of blackcurrant jam;
  • A glass of sour cream;
  • 2 cups flour;
  • 1-1.5 tablespoons of soda.

for the cream:

  • 700 grams of sour cream;
  • A glass of sugar.

for impregnation:

  • 1.5 cups of blackcurrant jam (without berries);
  • Tablespoon of sugar;
  • A glass of water.

  1. Beat the eggs and sugar using a mixer or blender. Add the jam and baking soda.
  2. Next, as the recipe says, you need to wait a while for the chemical reaction between the soda and jam to occur.
  3. Then quickly stir the sour cream and flour into the batter for the cake layers. The mixture should be a soft lilac color.
  4. Grease a round baking pan (springboard is fine) thoroughly with butter. Pour the resulting batter into the pan.
  5. The recipe recommends baking the cake for 15 minutes at 220 degrees Celsius (425 degrees Fahrenheit), then reducing the temperature to 200 degrees Celsius (400 degrees Fahrenheit) and baking for another 20 minutes. Then reduce the temperature to 160 degrees Celsius (325 degrees Fahrenheit) and bake for another 10 minutes. It should be plump and fluffy.
  6. Let the cake crust cool while we prepare the soak. Combine the currant syrup, sugar, and water and place over heat. Bring the mixture to a boil, stirring constantly, until the sugar is completely dissolved.
  7. Cut the cake into two halves. The recipe recommends using silk thread, but thin fishing line will also work. You can also use a knife, but this requires skill and experience.
  8. We soak each cake layer separately.
  9. Make sour cream: thoroughly beat sour cream with sugar until a soft and smooth mass is formed;
