Undoubtedly, chocolate is an unrivaled creation of confectioners, but for sophisticated sweet-tooths, chocolate alone is no longer enough as a dessert. Now, imagination, skill, and creativity are essential in preparing various dishes using this product. Chocolate is used in confectionery in various forms: solid pieces or melted chocolate added to dough. Grated chocolate is also used to decorate cakes and pastries.

By adding cocoa butter and powdered sugar, you can create homemade chocolate, adding your favorite ingredients, such as a splash of your favorite liqueur, nuts, or dried fruit.
Chocolate Brownie Pie
One of the most popular and beloved recipes worldwide is the chocolate brownie. Its tender, sweet, airy pastry and chocolate crust have become a staple of the holidays, not only in faraway America (where this chocolate masterpiece originated), but also here in Russia. We offer a recipe for a quick and easy chocolate dessert, slightly modified and supplemented with new ingredients. We hope you enjoy this fresh recipe.
To prepare the chocolate dessert "Brownie" with walnuts, we will need:
- wheat flour 140 grams;
- walnuts – to taste, medium size, approximate quantity 145 grams;
- high-quality dark chocolate 145 grams;
- chicken eggs 4 pieces;
- sugar and butter, 175 grams each.
It will take you about 40 minutes to prepare this dessert.
The first step in this dessert is to dry and crisp the walnuts in the oven at 150 degrees Celsius (300 degrees Fahrenheit) until the skins are easily removed, but for no more than 20 minutes. Now you can melt the chocolate. You can do this in the microwave or in a double boiler, but be sure not to let it cool before mixing with the other ingredients.
Add the melted chocolate to the preheated butter and beat until combined. Add the eggs one at a time. After adding the eggs, gradually whisk in the sugar. Once the sugar has dissolved, begin to slowly whisk in the flour. Once all the chocolate ingredients are combined, add the chopped walnuts.
Traditionally, chocolate desserts are baked in a rectangular pan. For this recipe, a 24x24 cm pan is suitable. Line it with parchment paper, using two strips laid crosswise.
Pour the batter into the pan and spread it out so the surface is even. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Place the pan in the oven and bake for approximately 20-25 minutes. It's crucial to bake the chocolate batter to the brownie-perfect temperature. Ideally, you'll have a dense, sugary crust, but the inside should remain soft and slightly moist. This is exactly how the original brownie recipe should be made.
When the chocolate cake is ready, don't rush to remove it from the pan; let it rest for about 30 minutes before removing it. Let it cool for another 30 minutes, then cut it into equal-sized squares.

Products you will need:
- pears, preferably hard varieties, not very sweet – 4 pieces;
- brandy, whiskey or cognac – about 2 tablespoons;
- a bar of dark chocolate – 100 grams;
- store-bought, ready-made puff pastry – 250 grams;
- brown cane sugar.
First, cut two 1cm-wide strips from a piece of dough. These will form the edges of the pie. Roll out the remaining dough into a rectangle, unfold it, and visually divide it into three equal parts lengthwise. Place them in a narrow rectangular pan, centering the middle strip.
Now grate the chocolate coarsely and sprinkle it over the center of the dough. Then, using the left side of the dough, fold it over and close the chocolate layer, sprinkle more chocolate on top, and then close it with the right side. Press the edges lightly to ensure they stick together.
Place the reserved dough edges around the edges. Brush the entire surface of the dough with sugar syrup. Prepare it as follows: brown sugar, 1 tablespoon of water, mix, and bring to a boil.
Halve the pears, remove the cores, cut into wedges, preferably of equal size, drizzle with cognac, and toss. Place the pears on top of the dough, drizzle with sugar syrup, and bake in the oven. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and bake for 25-30 minutes, until the pears are golden brown.
This dessert should be served warm, before the chocolate sets and hardens. You'll love the unusual combination of pear and the chocolate-rich filling.
Fruit mousse with chocolate
Besides baked goods, chocolate can be used in various mousses, jellies, and puddings. This unusual recipe, in which the flavor of chocolate mousse is complemented by the taste of ripe, juicy plums, is sure to intrigue and make you want to try it.
To prepare dessert according to this recipe we will need:
- about 500 grams of ripe plums, 6 pieces immediately separated for decoration of the dish;
- 400 grams of dark chocolate;
- 50 ml of your favorite red wine, preferably dry;
- 50 grams of soft butter;
- cream, 20% fat, about 100 ml;
- 4 tablespoons of chocolate;
- 1 tablespoon cane sugar;
- Cinnamon, a pinch of sea salt.
Prepare the plums by cutting them, removing the pits, and placing the plums, wine, salt, and sugar in a small saucepan. Bring to a boil and cook for 4-5 minutes, until soft.
The next step in the recipe is to peel the plums and puree them in a blender until they form a coarse puree. Now heat the cream, add the broken chocolate, and cook over low heat, stirring constantly, until all the chocolate has melted.
The dessert will be even more rich and delicious if you add butter and then, after stirring, add the plum puree. The recipe calls for pouring this mixture into molds, but since it sets very tightly, you can use a pudding mold. Refrigerate the dessert for 30 minutes until it sets.
Now it's time to prepare the plums for the dessert garnish. Melt 2 tablespoons of honey in a small bowl and bring to a boil. Prick the plums for the dessert garnish in several places with toothpicks, place them in the honey, and simmer for a few minutes. Cool thoroughly, cut into wedges, and arrange them on each serving.
