You can take a sneaky approach by buying a cake from a store or ordering sweets delivered to your home. But then you'll be depriving yourself of the moment of glory when guests start praising your delicious table. So, it's best to have a couple of easy recipes in stock that you can remember without writing them down.
One such recipe is a delicious chocolate cake made with kefir and called "Fantastic". Even a teenager can make it. This cake takes about an hour to make, but doesn't require much effort or ingredients.
Cooking with kefir
So, you've been told that a fun group will be gathering at your place this evening. Let's get ready. Open the refrigerator and find:
- Sour milk, kefir (or sour cream, which can be diluted with water) - 300 g;
- Sugar – 1 glass;
- Eggs – 2 pcs;
- Refined deodorized oil - 2 tbsp;
- Cocoa or grated chocolate (chocolate powder) – 2-3 tbsp;
- Soda – 1 tsp;
- Premium wheat flour – 2 tbsp.
These are the ingredients you'll need to make the dough. This kefir cake will serve 8 people, so be sure to have a large bowl ready for mixing the dough.
Sour cream or custard?

By improvising, you create your own culinary dish, which may soon take its place of honor among the world's classic recipes. Seriously, this is how such masterpieces as the "Kartoshka" cake and apple pastila were once created.
For the cream in the first version you will need:
- Full-fat sour cream – 1 pack or 400g;
- Granulated sugar – 1 cup or to taste;
- Butter – 200 gr.
The second version of the kefir cake filling features a delicate custard. It takes much longer to prepare, but the effect will be more dramatic.
Necessary products:
- Chicken eggs 2 pcs;
- Sugar 300-400 g;
- Flour 2 tbsp;
- Milk – 2 cups (400g);
- Vanilla sugar (packet) or a few vanilla grains;
- Unsalted butter 200g.
You can use sprinkles to decorate the cake. Use crushed nuts, cookies, cereal, or confetti.
Chocolate cake "Fantastic" with kefir
If you want to make a kefir cake like the one in the photo, you'll need to carefully read the recipe and follow it step by step. It won't be too difficult. And listening to your favorite radio station will set the mood for a pleasant cooking experience.
Step 1. To prepare the "Fantastica" cake batter, you won't need a lot of equipment or attention. Simply combine everything in one bowl: kefir, eggs, and butter, and whisk until smooth. In a second bowl, combine everything left on the counter. These are the dry ingredients: cocoa, baking soda, flour, and sugar.
Step 2. Now pour the liquid mixture into the dry mixture and mix thoroughly. You'll have a fragrant, but not ready-to-bake mixture.
Select a suitable pan for your future cake. Be sure to grease it before adding the raw dough. Spread the mixture out so it bakes evenly, otherwise the cake won't take shape and won't be even.
Step 3. Bake the cake in the oven for 50 minutes at 200 degrees Celsius (400 degrees Fahrenheit). If this temperature seems too high, reduce the oven temperature to 170 degrees Celsius (350 degrees Fahrenheit). The cake will take a little longer to bake, but it will be golden and delicate in taste.
Step 4. While the chocolate cake is browning in the oven, let's make the frosting: cream the softened butter with sour cream, then whisk in the sugar. This is the first simple and incredibly quick frosting recipe.
The custard is a bit more complicated. While the milk is boiling, whisk the eggs and sugar until white. Once the milk boils, combine the mixtures, stirring constantly. Then reduce the heat, but continue stirring. Add vanilla sugar or vanilla crystals to the custard. Whip the cooled custard with softened butter and refrigerate for 40 minutes.
Step 5. Generously coat the cake with your chosen frosting or any frosting you like. Let it soak for 30 minutes and serve your chocolate kefir cake. Fantastic!
