To prepare the sponge dough recipe, beat the egg and sugar until smooth. Slowly add the cocoa, flour, and baking powder, mixing thoroughly with a wooden spatula. It's best to dissolve the starch in a small amount of water before adding it.
Lastly, add the vegetable oil and milk. Gently stir until you have a smooth dough. It should be elastic, stretchy, and flow with the spoon. Pour the dough into a round, high-sided pan. Line the bottom of the pan with parchment paper and grease the sides well with butter.
Bake at 200 degrees Celsius (400 degrees Fahrenheit) until done. Baking time depends on the size of the pan. You can test the cake's doneness by inserting a wooden skewer or toothpick into it – if it comes out clean and dry, it's ready.
The recipe for the cream is extremely simple: beat sour cream with sugar until smooth and fluffy. You can add vanilla to flavor the cream.

The following recipe will satisfy even the most discerning sweet tooth. It combines berries with three types of chocolate to create a tart sponge cake, a delicate mousse, and an airy soufflé. This recipe may seem complicated, but it's not, so don't be intimidated.
For the biscuit base you need to take:
- 4 eggs
- 2 bars of dark chocolate (must be non-porous and without additives)
- 100 grams of butter
- 1 tablespoon of sugar
- 1 teaspoon of cocoa
- Vanillin
- 300 grams of cherries
To prepare the middle layer you will need:
- 350 ml cream, at least 30% fat content
- 2 bars of milk chocolate
- Half a glass of water
- 2 tablespoons cocoa
- 1 tablespoon of sugar
- Salt on the tip of a knife
The top layer is prepared from the following products:
- 350 ml heavy cream (at least 30%)
- One and a half bars of white chocolate
- 1 teaspoon of gelatin
- 1 tablespoon of ice water
The sponge cake recipe is the most complex. Place the broken chocolate in a bowl and place it over a double boiler. As it melts, add the butter and cocoa. Mix everything thoroughly and let it cool. In a separate bowl, beat the yolks with vanilla. Mix the yolks with the chocolate-butter mixture until smooth.
Beat the egg whites with sugar until stiff peaks form. Fold the resulting fluffy mixture into the chocolate mixture, being extremely careful not to allow the whites to lose volume. Bake the resulting batter in a high-sided pan at 180 degrees Celsius for approximately 30 minutes.
While the sponge cake is cooling, prepare the middle layer. Melt the chocolate in a double boiler and mix it with the cocoa powder dissolved in water. Whip the cream, gradually adding sugar and salt, until soft peaks form. Combine the two mixtures and mix well.
Spread the cherries, cut in half, in an even layer on the cooled cake layer. Pour the milk chocolate mixture on top, smooth it out, and refrigerate until the second layer is completely set. This will take about an hour. Place the berries on top of the finished layer, just as you would on a sponge cake.
The top layer recipe begins with preparing the gelatin. Pour ice water over it and let it swell for 10 minutes. Then, bring 100 ml of cream to a boil and combine with the gelatin and white chocolate. Whip 250 ml of cream until soft peaks form and then fold into the cooled chocolate mixture. Carefully spoon the mixture over the previous layer and let it set.
The finished cake will look very impressive. It can be served plain or topped with berries drizzled with chocolate syrup.
Drunken Cherry Cake
The most famous and popular chocolate cake is "Drunken Cherry." Its simple recipe can be used in homemade baking. The cake consists of just three ingredients:
Biscuit:
- 2 cups of sugar
- 2 cups of flour
- 6 tablespoons of cocoa
- Baking powder
- 1.5 teaspoons of soda
- 1 glass of milk
- 2 eggs
- 1 glass of boiling water
- Half a glass of vegetable oil
Filling:
- 2 cups fresh pitted cherries
- 2 tablespoons of sugar
- 1 glass of cognac or other strong, aromatic drink
- Chocolate syrup
Glaze:
- 1 bar of dark chocolate
- 6 tablespoons of milk
- 3 tablespoons of cocoa
First, prepare the cherries. A day before making the cake, sprinkle them with sugar and soak them in cognac. To make the sponge cake, mix together the sugar, flour, cocoa, baking powder, and baking soda. In a separate bowl, lightly beat the eggs with milk and vegetable oil. Combine all ingredients.
While stirring, pour boiling water into the dough. Bring the mixture to a smooth consistency and let it sit for 15 minutes. Pour the dough into the pan and bake. Divide the finished cake layer into two, scoop out the crumb to form bowls. Chop the crumb, mix with two-thirds of the cherry cherries and chocolate syrup, place it in the bottom cake layer, and top with the top layer.
The glaze recipe is the easiest: melt the chocolate and add milk. Pour the glaze over the cake until it's completely coated. Let it set slightly, then garnish with cocoa powder and a cherry.
