Cherries in desserts will probably never go out of style. Yesterday our grandmothers used them, today we do, and tomorrow our children will. There are a variety of traditional desserts, pies, pastries, jellies, etc., but today we will tell you how to make something more sophisticated – a cake with cherries and mascarpone cheese.

This dessert with Italian influences is very easy to make, and most importantly, it's delicious and tender, thanks to the cream cheese. Incidentally, mascarpone is one of the traditional Italian cheeses used primarily in desserts. It was invented in the late 16th century and has since been served in homes of both the rich and the poor. This exquisite culinary masterpiece is unmistakable; once you've tried it, you'll want to know the recipe and treat your loved ones to it.

To make this cherry cake, you can use either store-bought mascarpone or homemade mascarpone.

To make a delicious sweet and sour cherry cake, we first need to prepare the sponge cake—one of the most popular bases for baked goods, cakes, and desserts. In this case, we'll need:

  • 3 medium chicken eggs
  • 150-200 g of premium wheat flour
  • 150 g of white granulated sugar

First, beat the eggs thoroughly with 150 grams of sugar. If using a mixer, beat for 5-7 minutes, until the mixture has at least tripled in volume. If using manual mode, beat for longer, again aiming for a threefold increase in volume. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and begin mixing the dough. To do this, sift the flour through a sieve into the beaten egg-sugar mixture. Mix thoroughly, avoiding lumps, and pour into a baking pan. Bake for 30-40 minutes. Maintain the same temperature.

It's important to remember not to open the oven while the sponge cake is baking, otherwise it may not rise. This is a very delicate dough, so if you want to check on the cake, simply turn on the oven light and look through the glass.

It's worth mentioning that the baking pan can be anything, not just a tall, round one. It could be heart-shaped (this cake would be perfect as a sweet and intoxicating Valentine's Day treat) or fish-shaped for a child's birthday party. Use your imagination, and you'll create a magnificent cake!

So, our sponge cake is ready. We take it out and cool it. Next, we prepare the berries. We need 300 grams of cherries in their own juice. We'll let you in on a secret: if you're making this dessert for adults, you can soak the cherries in cognac or liqueur, or any other favorite and delicious "hot" drink. This will make the cake even more refined and a little intoxicating. Also, if you don't have the time or desire to steep the cherries, you can add a little alcohol to the juice. Just a drop.

Next, you need to soak the sponge cake. To do this, take the juice from the berries, add liqueur if necessary, and generously coat the sponge cake layer. Then, place the berries on the layer, removing the pits first.

Well, the most interesting part: we prepare the cream, for which we will need

  • A glass (or a 250 ml package) of cream with 33% fat content
  • Mascarpone 250-300 gr.
  • 150 g of sugar

Place the sugar and cream in a mixing bowl and beat until thick. Then add the cream cheese and beat again to combine. Spread the cream over the berries. Sprinkle the cake with grated chocolate. Ideally, let the cake soak overnight. The next morning, you'll have a delicious cherry cake.

Making mascarpone at home

For this cherry dessert, you can make your own mascarpone. It might not be authentic Italian mascarpone (which, by the way, isn't cheap), but the flavor is very similar. For homemade mascarpone, you can use very rich sour cream, preferably from a farm. Place it in a sieve, such as cheesecloth, folded several times, tied, and hung to drain for 20 hours. The result will be a delicious cheese with an exquisite creamy flavor, a la mascarpone, perfect for adding to a cake.
