You can safely say that the "Cherry Hill" cake comes from childhood. Maybe not from ours, but certainly from our parents' childhoods. His recipe was quite popular throughout the Soviet Union, as evidenced by numerous photos from family archives.
This cake has another name. Looking at the photo, it's easy to guess why. You might recognize it by this name—"Monastic Hut." While there aren't many variations of this cake, they do exist. We'll share a unique dough recipe that makes the "Cherry Hill" cake incredibly delicious. And its secret lies in one ingredient—honey.
Cherry hill with honey
So, here's the recipe for the delicious "Cherry Hill" cake, just like the one in the photo. First, prepare the following ingredients in the required quantities:
- Flour – 3 cups;
- Eggs – 3 pieces;
- Sugar – 2.5 cups;
- Frozen, fresh or canned cherries – half a kilo;
- Sour cream – 800 g;
- Honey – 2 tablespoons;
- Egg white – 1 piece;
- Soda – 1 teaspoon;
- Vinegar – 1 teaspoon;
- Nuts, chocolate – for decoration, optional.
Cooking process
Let's start preparing the cake with the dough. Take a deep bowl, beat in the eggs, and add a cup of sugar. Mix thoroughly, or rather, rub, until the mixture turns white. Then add the honey and baking soda, quenched with vinegar, to the same bowl. Next, add the flour, sifting it beforehand or as you go. Knead all the ingredients into a dough. It should be soft but still firm. Of course, the recipe requires that it not stick to your hands.
Next, we continue working with the dough. We divide it into 15 equal parts. Roll each part into a strip. It should be about seven centimeters wide, maybe a little less.
Next, we'll make the filling. As you might have guessed, it's cherry. If you're using cherry compote or frozen cherries, squeeze out the juice. Then, arrange the cherries in a row on each strip of dough. Roll each strip into a roll, pinching the edges tightly to prevent the fruit juice from leaking out. You'll end up with 15 rolls, each filled with cherry filling.
Next, turn on the oven. Set the temperature to 200 degrees Celsius (400 degrees Fahrenheit) and, while it's preheating, place the rolls on a greased baking sheet. Once the oven temperature has reached the desired level, place the rolls in. According to the recipe, they need to bake for half an hour.
Let's prepare the most delicate frosting for the "Cherry Hill" cake. Place the sour cream in a bowl and combine it with the sugar and egg whites. Mix thoroughly, then beat the mixture thoroughly with a mixer. It should become fluffy and airy. Next, create a double boiler and place the bowl with the whipped filling over it. Heat the frosting while stirring. It should become about 1.5 times its original size. Then remove it from the oven and let it cool. That's it—the frosting for this cake is simple, and it's ready.
Meanwhile, the rolls are baked. Carefully remove them and let them cool. Then arrange them on a plate, forming a cake in the following order: 5, then 4 on top, then 3, then 2, and then 1 on top. Spread each layer with cream, then spread it on top. You can decorate it with nuts, chocolate shavings, or cookie crumbs. Afterwards, let the treat soak for a few hours, and then refrigerate it for about two hours before serving.
