As a child, every girl dreams of being a princess, even if only for a little while, and living in a big, beautiful castle with her prince. Today, we can make a "Princess Castle" cake for our daughters and granddaughters. Here are a few recipes.

Let's start making the cake. First, prepare the fondant: melt 100g of white chocolate separately in a double boiler, add 2 tablespoons of honey, and stir with a wooden spoon. Pour the mixture into cling film and refrigerate.

To make the rolls, beat 10 eggs with granulated sugar until pale, then add a little flour and mix. Divide the dough into a larger and smaller portion and bake on a parchment-lined baking sheet. Bake for 15 minutes at 175°C. Sprinkle the baked cake layer with granulated sugar and roll it into a roll. Repeat with the second cake layer. Prepare the same dough for the base of our castle.

To make the cake frosting, mix flour with milk and powdered sugar. Place the mixture on the stove. Cook, stirring, until thickened. Add 180 grams of white chocolate, stir, and let cool. Add the butter.

The cream for the rolls is made by whipping butter, banana, and condensed milk. Then, take the rolls. Mix the liqueur with water, soak two rolls in it, coat them with cream, and roll them back up.

Take the cake base, cut it in half, and soak it. Place one half of the cake on the table, spread it with cream, sprinkle with nuts, add the meringue, then sprinkle with nuts and more cream. Place the other half of the cake on top and coat the top and sides well. Refrigerate the cake to set.

Now let's assemble the towers. Sprinkle the table with starch, lay out the fondant, and roll it out. Place the roll on top, wrap it in fondant, smooth it out, and refrigerate. Work quickly with the fondant to prevent it from melting.

The most important step is assembling the castle. Make another layer of white chocolate frosting. Add pink food coloring to this frosting. Take the cones for our towers and cover them with frosting as shown in the photo. Your imagination will dictate how you decorate the cake.

Ingredients:

  • 2 cups of flour
  • 4 tbsp cocoa powder
  • 1.5 cups granulated sugar
  • 2 tsp baking powder
  • 3/4 cup water
  • 7 eggs
  • 1/2 cup vegetable oil
  • Salt

Separate the egg whites and yolks. Combine the flour, granulated sugar, salt, and baking powder. Add the yolks, water, and vegetable oil. Mix thoroughly with a blender. Whisk the egg whites and carefully fold them into the mixture. Bake at 175°C (350°F) for about 40-50 minutes. Cut the cake into three pieces.

Now we prepare the chocolate cream mousse.

Princess Castle 4

We will need:

  • 3 eggs
  • 6 tablespoons of granulated sugar
  • 6 tablespoons of starch
  • 500 ml of milk
  • 150 g of chocolate
  • 200 ml heavy cream

Whisk the egg white and yolk with granulated sugar, then mix the starch and milk (200 ml). Heat the remaining milk, add the milk mixture, and then pour in the eggs. Simmer, stirring, until thickened. Pour the chocolate into the mixture and stir, then cool. Whip the cream and carefully fold it into the mousse. Make a syrup from the sugar and water, soak each sponge cake with it, and then spread it over the mousse.

To make the cream, mix 2 egg yolks, 0.5 cups of granulated sugar, 1 level tablespoon of flour, and 200 g of milk. Stir until it boils. Remove from the heat and let cool. Take 200 g of room-temperature butter and mix it into the mousse. Then spread it over the top and sides and let the cream set.

To make the mastic, melt 100g of marshmallows with 1 tbsp of butter. The mixture should expand. Mix 200-300g of powdered sugar until it reaches a "plasticine" consistency. Roll the mastic out to a thickness of 3mm to prevent sticking, and dust with starch. Now you can decorate your "Castle" cake as pictured, or however your princess desires.
