This banana cheesecake is a perfect dessert for those who love something sweet but can't eat all the cakes and pastries they can because they're on a healthy diet. The base of the pie is bananas and cottage cheese, so it turns out healthy, but at the same time very tasty.

Classic recipe

To make banana cheesecake, you will need the following ingredients:

  • 2 cups of flour
  • 1.5 cups of sugar (for decoration, you can add vanilla sugar at the end)
  • 200 grams of butter
  • 1 teaspoon of slaked soda
  • 3 bananas
  • 4 tablespoons of semolina
  • 2 eggs
  • 450 grams of cottage cheese

First, let's knead the dough. If the butter is fresh from the refrigerator, microwave it for 10-20 seconds to soften it. Place it in a bowl. Then, take a third of the prepared sugar (in our case, half a cup) and pour it into the same bowl. Then, grind the two ingredients together until smooth.

Sift the flour through a sieve to aerate it, then pour it into the butter and sugar mixture. Add a teaspoon of baking soda, first quenched with lemon juice or vinegar—this will make the pie fluffier. Mix everything thoroughly until the dough forms a smooth, viscous mass. Then wrap it in plastic wrap and refrigerate—once it's cooled, it'll be easier to shape the pie crust. While it's cooling, let's make the filling.

Pour two eggs into a shallow bowl, add the remaining cup of sugar, and the cottage cheese. Mix everything until smooth, then add the semolina flour and mix again. If you don't want to do this by hand, you can use a blender, but the filling will have a porridge-like consistency, which some people may not like.

After this, you can add the bananas. If you blended the ingredients in the previous step, you can do the same with the bananas. Another option is to slice the bananas and mix them with the filling so they're noticeable in your mouth while eating. Mix them carefully to avoid breaking them. Of course, if they do break, it's not a big deal, but it won't be as pretty.

Finally, it's time to shape our pie. Take a high-sided baking pan and line it with the bottom layer of dough, forming the edges. Then spread the cottage cheese and banana filling evenly. Use the remaining dough to form the top layer. If you have some dough left over, you can get creative and shape it into patterns or designs on the surface of the pie.

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit), place the pie in, and bake until done—about 30-40 minutes. Serve the pie chilled or straight from the oven.
