"Vanka Kucheryavy" - baked goods that will help you remember your childhood

Today we will remember our childhood with homemade baked goods "Vanka Kucheryavy".Back when fresh cake wasn't readily available in supermarkets, every mother wanted to treat her family to something sweet. The recipe wasn't particularly complicated or involved many ingredients, so cakes were baked in every home.
Why "Vanka," and why "kucheryavy" (curly)? "Kucheryavy" or curly—because the haphazardly torn cake layers, covered in sour cream and icing, piled on a round base, resemble curls on a head. And "Vanka"—because that name was very common when the recipe appeared. It resonated with our people, which is why the cake became such a favorite. You'll agree, that name is much more playful than "Kucheryavy Pinscher."
This recipe is incredibly simple—you can just throw everything in a blender and the dough is ready! The ingredients are also easy to find on hand. Typically, the recipe is based on kefir or sour cream. You can, of course, make a sponge cake, but that would be a different cake. I'm offering two classic recipes. You can always modify them to suit your needs. Let's look at the kefir recipe first.
Vanka the Curly Cake with Kefir
Products used:
- Kefir (homemade is fine) – a faceted glass (about 250 g)
- Medium chicken eggs - 3 pcs.
- Granulated sugar – 1 cup for the dough and 1 cup for the cream
- wheat flour 6 good tablespoons
- Baking soda - 1 tsp.
- Cocoa powder - 3 tbsp. l. for the dough and 2 tbsp. for watering
- Sour cream (for cream), preferably fatter - 200 g
- Butter – 10 g
- Milk – 1 shot (100 g)
Method of preparation:
- In a blender, beat the eggs with sugar. Pour in the kefir. Beat again. Divide into two parts.
- Mix half the flour with half the baking soda. Mix the remaining flour and baking soda with cocoa.
- Add flour and flour with cocoa to two parts of the dough.
- Bake the dough in two batches until the dough comes out smooth when pierced with a fork.
- Mix the cream. Beat the heavy cream and granulated sugar until the sugar dissolves.
- Assemble the cake. Place the brown cake layer on the bottom – this will be the base of the cake. Spread it generously with frosting. Carefully tear the white cake layer into small pieces, directly into the frosting. Arrange it in a round dome shape on the brown cake layer.
- Let's prepare the glaze. Bring the milk to a boil. Add the sugar and cocoa and cook for 2 minutes. Then add the butter and cook for a little longer.
- Pour the glaze over the cake and let it soak overnight.
Here's a recipe with sour cream.
Here the portion will be twice as big.
Products used:
- Sour cream (10-15% fat) – 400 g (packet) for the dough and 800 g (two packages) of full-fat for the cream
- Granulated sugar - 300 g
- Wheat flour - 3 cups
- Chicken eggs - 3 pcs.
- Soda - 1 tsp.
- Cocoa powder - 6 tbsp.
- Chocolate bar
Recipe:
- Beat the eggs with the granulated sugar. Pour in the sour cream. Beat again. Add the flour sifted with baking soda. Mix well to avoid lumps.
- Divide the dough in half. Add cocoa to one half. Leave the other half as is.
- Bake for 20–25 minutes at medium temperature.
- To prepare the cream, beat the heavy cream with sugar until dissolved.
- Let's assemble the cake. Now for the white base. Cut the chocolate into pieces and dip them into the cream (mold some of the cream first). Arrange them in a mound. Then, using a spoon or a piping bag, pour sour cream on top. Sprinkle with chocolate shavings.
You can add a little bit of your own touch to this culinary masterpiece. For example, a light-colored cake layer is usually placed on top, but I prefer a torn chocolate layer. Then my "Curly Vanka" is a dark-haired man! And of course, instead of icing, you can simply sprinkle it with grated chocolate. This will make the cake even curlier. And finally, add your favorite nuts or berries to the recipe.
Having learned how to prepare this dessert, we can happily say that "Curly Vanka" can be made not only for a family feast but also for a holiday table. Simply treat yourself to this delicious and delicate dessert.
