Lenten dishes are always popular, just like traditional ones. This is because many people fast for religious reasons, some are on a diet, and others crave something lean. The cake can be lean and very tasty. We offer two recipes with cherries, from which you can choose the one that suits you best.

Cherry and banana cake

This Lenten cake is easy to make, doesn't require much time, and doesn't require any special skills. To make it, you'll need the following ingredients:

For the test:

  • 250 ml of unflavored vegetable oil
  • 25 ml sparkling water (not sweet)
  • lemon juice or ¼ teaspoon citric acid
  • Half a teaspoon of salt
  • Half a kilogram of flour

For the filling:

  • 1 kg frozen cherries or fresh
  • 2-3 bananas
  • 200 g of white sugar
  • A teaspoon of starch

For the glaze:

  • 50 ml cherry juice
  • Cocoa and sugar 25 g each
  • A little honey

To prepare the dough, take a deep bowl and combine the sparkling water with vegetable oil, then add salt and acid (or lemon). Gradually add the flour, stirring to avoid lumps. The result will be a firm dough that doesn't stick to your hands. Cover and let rest in the kitchen for half an hour.

After this time, roll out the cake layers to a thickness of 3 mm. To do this, divide the dough into equal pieces and roll them out, piercing them with a fork all over the surface of the cake. Place in the oven and bake at 200 degrees Celsius for 7 minutes.

To prepare the filling: defrost the berries, remove any pits, sprinkle with sugar, and let sit for a while until the cherries drain. Pour the resulting juice and sugar into a separate saucepan, add the cornstarch, and simmer the sauce over low heat.

The cake layers are already baked; you might end up with 6-7. We'll wait for them to cool and then form the cake into layers:

  1. Place the cherries (you can sprinkle them with sugar)
  2. Grease with sauce, place bananas cut lengthwise
  3. Coat with sauce again and put bananas on top.

Cover with the sixth layer. Next, let this Lenten cherry masterpiece sit to soak, preferably overnight. In the morning, prepare the glaze: mix all the ingredients and simmer over the heat until everything is melted. Cool and glaze the cake. Decorate as desired. Our Lenten dessert is ready!

The most delicious spicy cake

Another equally simple, Lenten, and delicious cherry dessert can be made and served during Lent. For the dough, you'll need:

  1. Half a kilogram of flour
  2. A glass of water
  3. Half a cup of chopped walnuts
  4. Two tablespoons of cocoa
  5. Three tbsp. l. honey and sugar
  6. 20 ml of vegetable oil
  7. A teaspoon of baking powder
  8. Cinnamon stick, 2-3 cardamom seeds, nutmeg (pinch)
  9. 100 g raisins

We prepare everything very quickly: soak the raisins for 10 minutes, mix sugar, butter, and honey in a glass of water, grind the spices, and add cocoa and baking powder to the flour. Mix the water with the flour, add chopped nuts and raisins. Place in the oven for 40 minutes at 180ABOUT). For the cream, heat 2 cups of water, add 10 grams of sugar and 50 grams of semolina. Cook for 10 minutes. Add 1 tablespoon of vegetable oil, vanilla sugar, and thick cherry syrup from the jam. Beat with a mixer.

To make the Lenten cake: cut the pie, spread it generously with cream, and place the cherries in the center. Spread the frosting on the sides. Decorate as desired. It's best to refrigerate the dessert overnight.
