- Egg – 1 pc.;
- Bread crumbs – 50 g;
- Heavy cream – 50 g;
- Dried apricots – 80 g;
- Vanillin to taste;
- Salt – 1 pinch;
For salsa you will need:
- Pear – 1 pc.;
- Butter and vegetable oil 50/50 – 1 tbsp;
- Granulated sugar – 80 g;
- Lemon zest – 0.5 tsp;
- Lemon juice – 1 tsp;
- Cognac – 1 tbsp.
Recipe:
- Rinse the dried apricots thoroughly under hot water, then cut into strips or small pieces.
- Place the cottage cheese in a blender bowl, then add the cream, melted and cooled butter, sugar, salt, egg yolk, and vanilla. Blend until combined.
- Add bread crumbs to the mixture. To make the crumbs, you'll need several pieces of white bread, which you'll need to grind in a blender.
- Beat the egg whites until stiff and fold into the curd mixture. Gently combine with a spatula, stirring from the bottom up.
- Add dried apricots, stirring gently.
- Grease the bottom and sides of the pan with butter and pour in the prepared curd mixture. Gently smooth the surface, but do not press down.
- Pour 0.5 liters of water into the Redmond multicooker bowl and install the steaming rack. Place the prepared pan on top.
- Turn on the "Steam" mode for 15 minutes. After the signal sounds, leave the dessert in the multicooker for another 40 minutes. Do not open the lid.
- After this time, you can remove the pudding, but do not remove it from the mold. It is important to let the dessert cool completely, as the pudding is very runny when hot.
Now let's move on to preparing the pear salsa.
- Peel the pear and cut into small pieces.
- Take a saucepan and melt the butter in it.
- Then add sugar, lemon juice and zest. Bring to a boil until the sugar dissolves.
- Add the chopped pear to the saucepan and fry for 4 minutes. The fruit should become translucent.
- Add cognac and let the liquid evaporate slightly. Watch carefully: there should be some syrup left from the caramelized fruit.
- The cooled pudding can be removed from the mold and topped with pear salsa.
- Cut the curd pudding into portions and serve.
