Let's make a fragrant homemade crème brulee
So, first, let's figure out how this ice cream differs from others. Crème brulee ice cream prepared on the basis of caramel. It's this that gives it its unique, incomparable taste and aroma. And making this caramel is quite simple: just using regular sugar.
As for the other ice cream ingredients, they absolutely must be as fresh as possible. This is essential for cream and eggs. Ideally, these ingredients are completely homemade.
A few words about utensils are also worth mentioning. You don't necessarily need an ice cream maker to make our treat. We can easily make it with regular utensils. Just make sure to place some of the utensils (the recipe will specify which ones and when) in the freezer for a specific amount of time before using. Now, let's get to the actual recipe for this delicious treat.
How to make creme brulee?
For this we will need the following products:
- Cream 33% – 600 grams;
- Eggs – 4 pieces;
- Sugar – 12 tablespoons;
- Dark chocolate – 20 grams.
So, first, we need to prepare the base that gives the ice cream its distinctive flavor and aroma. This is caramel. To do this, take 4 tablespoons of sugar and melt it in a heatproof bowl. Important: do not add water. Once the sugar has melted, add 100 ml of cream and stir quickly. Don't be alarmed if the caramel starts to set. Continue stirring: after a few minutes, it will acquire a smooth consistency. Once this happens, remove the caramel from the heat and let it cool. The best way to do this is by placing the container with the caramel in cold water.
Next, take the eggs and perform the standard procedure: separating the yolks from the whites. Beat the yolks thoroughly with three tablespoons of sugar. Then pour the beaten yolks into the container with the cooled caramel and stir.
Next, we'll make the cream. Place the container we'll be storing it in in the freezer half an hour before using. So, when we take the bowl out of the freezer, add the cream, add three tablespoons of sugar, and beat thoroughly until fluffy. Add it to the caramel and egg yolks. Mix again until smooth.
Next, it's time for the egg whites: beat them, adding the same amount of sugar as you did for the cream (3 tablespoons). Whip the whites until they form a beautiful, fluffy white foam. Add the whites to the remaining caramel-based ingredients and mix very carefully. Do this by hand, taking your time.
Next, take a chilled container large enough to accommodate the entire mixture. Transfer the ice cream into this container. Place our beautiful creation in the freezer. After 40 minutes, stir it. Repeat this process twice. Stir thoroughly, but very carefully and gently. This is necessary to ensure the ice cream is smooth and free of crystals. After this, the ice cream is almost ready. Transfer it to smaller containers, cover with plastic wrap, and return it to the refrigerator for another two hours.
Place the finished dessert into bowls, sprinkle with grated chocolate or topping and serve. Ice cream It turns out to be very rich in taste, tender and homogeneous.
