How does plombir differ from its counterparts—other types of ice cream? First of all, the plombir recipe calls for high-fat cream. It's believed that if you make this dessert with less than 30% cream, it's no longer considered plombir—it's just regular ice cream. Therefore, if you decide to make this delicacy at home, be sure to use truly heavy cream. Homemade plombir ice cream is much tastier than commercially made, and its recipe is much simpler than it seems!
Classic Creamy Ice Cream Recipe
Ingredients:
- Eggs (we will only need the yolks) – 4 pcs.
- Powdered sugar - 250 gr.
- Cream (7 to 10% fat) – 250 ml.
- Whipping cream (30% and above) – 500 ml.
- Vanilla sugar – 1 packet.
Recipe:
- Separate the yolks from the whites and combine them in a heavy-bottomed saucepan with 200 g of powdered sugar. Stir thoroughly until the mixture is white and smooth.
- Gradually add low-fat cream to the mixture, stirring vigorously with a whisk or beating with a mixer at low speed.
- Add vanillin and mix well again.
- Place the mixture over low heat and, stirring constantly, bring it to a consistency where a spoon stroke remains for several seconds. Never allow the mixture to boil, as this will cause the yolks to curdle, and the mixture will need to be discarded.
- Cool the finished mixture, stirring well, then strain it through a sieve into a freezing mold and place it in the freezer.
- At this time, beat the whipping cream and the remaining powdered sugar with a mixer (at medium speed) until it forms a nice, firm foam.
- Remove the mixture; it should be semi-frozen. Gently stir the mixture into the whipped cream until it's smooth but doesn't settle.
- After this, we put our homemade ice cream mixture back into the freezer, or first we spread the resulting mixture into molds and place them in the freezer compartment of the refrigerator.
- Before serving, remove the molds and let them sit at room temperature for a couple of minutes. This will make the ice cream easier to remove. If your homemade ice cream is in a large mold, you can use a special scoop or a regular one dipped in warm water to form balls. You can decorate these balls with chocolate chips, berry syrup, or liquid caramel before serving.
In principle, making ice cream at home isn't all that complicated; the only difficulty is heating the yolks. A novice kitchen worker might have a hard time determining when the yolk mixture is hot enough to move on to the next step. For those who want to make ice cream at home and avoid this difficult step, there's another recipe for this wonderful treat.
Ice cream with proteins
Ingredients:
- Eggs (we will only need the whites) – 6 pcs.
- Full-fat milk or low-fat cream (6 to 15% fat) – 200 ml.
- Whipping cream (30-35%) – 300 ml.
- Sugar – 400 gr.
- Vanillin or vanilla essence – to taste.
Recipe for making dessert:
- In a saucepan with a thick bottom, mix two types of cream and 150 g of sugar.
- Place over low heat and stir vigorously until all the sugar has dissolved and the cream has reached a smooth consistency. Then turn off the heat, let it cool, and place it in the freezer.
- Carefully separate the whites from the yolks, making sure that none of the yolks break or end up in the whites.
- In a separate, dry bowl (this is important!), add the remaining 250 grams of sugar. Add the egg whites. Begin beating the mixture with a mixer, starting at low speed and gradually increasing the speed. Beat until stiff peaks form (the mixture should remain motionless at the bottom when you try to turn the bowl upside down).
- We take the creamy mixture out of the freezer – it should cool well, but not solidify.
- Carefully and gradually pour this mixture into the whipped egg whites, stirring gently. In this manner, batch by batch, completely combine the egg whites and cream mixture until smooth.
- Transfer to a freezing mold and place in the freezer. After an hour, remove the mold and stir our future homemade ice cream. After another hour and a half, stir again. And in another two hours, the ice cream will be completely ready!
This recipe is much simpler than the previous one, and it's easy to make at home. You can skip the last step if you have an ice cream maker. With an ice cream maker, all you need to do is carefully pour the mixture into it and turn it on. With this setting, everything will be ready in half an hour! Now all that's left to do is decorate our homemade ice cream before serving—how exactly is up to you!
