Light sorbet made from assorted berries
Sherbet is a light fruit ice cream made without the use of milk or cream. It's also known as sorbet. And this, incidentally, is considered a fitting name, as traditional sherbet is an Eastern drink made from berries and aromatic spices.
In the modern culinary world, sorbet is made from fruit and berry juices, spices, sugar, and ice cream. It is loved and appreciated for its lightness and freshness, as well as for the hundreds of different flavor combinations it offers.
Assorted sherbet
This recipe is one of the most common variations of sorbet.
To make ice cream you will need:
- assorted berries (can be frozen) - 350 g
- granulated sugar - 210 g
- purified water - 1.5 cups
- lemon juice - 1 tsp
- cinnamon
- mint leaves
First, make the sugar syrup. Pour water into a saucepan. Add granulated sugar and lemon juice. Cook until the liquid becomes slightly viscous.
Blend the berry mixture until smooth and pour into the syrup. Mix thoroughly with a mixer or blender. Add the spices, pour into molds, and freeze until set. Garnish with mint leaves.
If desired, you can add ice cream (a few scoops) to the sherbet, which will make it more caloric and filling.
Ice cream with raspberry liqueur
Another version of this dessert involves using alcohol, so it should only be served to adults.
This dessert will be an exquisite addition to any festive table.
So, we will need:
- raspberries - 350 g
- orange zest - 1 tsp
- almonds - 50 g
- drinking water - 1.5 cups
- granulated sugar - 200 g
- lemon juice - 1 tsp
- raspberry liqueur - 50 ml
- ice cream (optional) - 100 g
Make a syrup by mixing water, sugar, and lemon juice. Puree the raspberries in a blender and crumble the almonds. Mix everything with the syrup, adding orange zest, liqueur, and ice cream (optional). Mix until smooth and place in the freezer until completely set.
Serve ice cream with raspberry liqueur garnished with fresh berries and lemon balm or mint leaves.
Another, probably the easiest and fastest, option for making this dessert is to mix a ready-made smoothie, even store-bought, with syrup and freeze it.
