Ice cream on the Dukan diet

What's the secret behind the worldwide success of the much-talked-about Dukan Diet? It's in its famous motto: "Eat as much as you want!" Indeed, the French nutritionist doesn't strictly limit food intake or ban favorite foods. Your usual diet remains in place, but the emphasis shifts from carbohydrates to proteins.
And since there is no ban, it means that ice cream is also completely acceptable according to Dukan. And not only is it acceptable, there are several recipes for this delicacy from the most famous diet master.
Diet ice cream
To make dietary ice cream containing a large amount of protein, you will need:
- 1 glass of milk (skim);
- 3 eggs;
- 200 g cottage cheese (fat-free);
- a pinch of vanilla;
- sugar substitute (to taste).
The preparation of the delicacy is as follows:
- The process begins with separating the egg whites. Next, use a mixer to whip them into a very stiff foam. Gradually add the sweetener and vanilla.
- With the mixer running, add the cottage cheese to the whipped egg whites, then the milk, and finally the yolks. Blend until smooth and pour into the molds. Cover them with plastic wrap to prevent odors from penetrating. Freeze the low-calorie ice cream for 2 hours.
You can eat this delicacy in unlimited quantities. However, don't overdo it—there's always the risk of getting a sore throat if you indulge in too much of this cold food.
Pistachio ice cream
This ice cream version is a bit higher in calories, but it does contain pistachios, which really enhance the flavor. The ingredients used are almost the same:
- 200 g cottage cheese (fat-free);
- 2 tbsp pistachios;
- 4 egg whites;
- any sugar substitute.
Pistachio ice cream is prepared like this:
- Combine the sweetener (adjust to taste), cottage cheese, and chopped pistachios in a bowl. Separately, beat the egg whites until stiff peaks form. The stiffer the whites, the smoother the ice cream will be.
- When both mixtures are ready, the pistachio-curd mixture is added to the protein foam and everything is thoroughly beaten.
- The process is then repeated: the ice cream is poured into bowls and frozen. This time, the freezing process will take at least 5 hours.
Mint ice cream
Another delicious ice cream recipe based on Dukan's plan is mint. For this one, you'll need:
- ½ liter of milk (skimmed);
- 100 g fresh mint;
- 5 eggs;
- sugar substitute.
Making mint ice cream:
- Grind the mint leaves in a blender with the sweetener. Turn the mixture into a paste.
- Separate the egg whites. Beat them with a mixer until stiff peaks form. Add the mint and milk. Continue beating for about 8 minutes, until the mixture thickens.
- Add the egg yolks to the mixture and continue beating for another 3 minutes. Pour the mixture into a freezer-safe container and freeze.
- The mixture should be removed and stirred every 20 minutes to prevent separation. After 4 hours, the soft-serve mint ice cream will be ready.
In conclusion, according to Dukan, it's not the quantity of food that matters, but the quality of it. Therefore, there's no point in depriving yourself of pleasant experiences by giving up your favorite foods.
