Truffles are among the most famous candies in the world. They originated in France, and their name comes from their resemblance to a premium mushroom called the truffle. Originally, this delicacy took the form of uneven balls, but later acquired the dome-shaped form we know today. These candies are easy to make at home – homemade truffles are just as good, if not better, than store-bought ones.
There are dozens of variations of truffle recipes. Classic truffles are made from chocolate, butter, and cream, then dipped in melted dark chocolate and rolled in cocoa powder. Today, the basic recipe for these candies differs little from the traditional one.
But the filling can be anything – almonds, walnuts, prunes, dried apricots, ginger, fruit, cornflakes. Toppings also vary – in addition to cocoa, you can use wafer crumbs, coconut flakes, or powdered sugar. You can even find truffles sprinkled with pepper, paprika, and other hot spices – sure to please those with a more adventurous palate.
The history of truffles
More than a century has passed since the world discovered the taste of these luxurious candies. And what's truly remarkable is that they owe their origin to an unfortunate accident. In 1850, an assistant to the world-famous chef Auguste Escoffier, while preparing cream for choux pastries, mixed up the containers and added hot cream to the chocolate mixture instead of the egg mixture. Terrified and knowing he would be punished, he decided to experiment – he rolled the resulting mixture into balls and rolled them in cocoa. Imagine his surprise when everyone who tried this "mistake" was indescribably delighted by the delicate, velvety flavor! Later, the recipe for the mixture from which these wonderful candies were made became known as ganache.
Europeans believed that truffles were made from ganache. The cream, incidentally, has a liquid or almost liquid consistency. However, Russians believed that truffles had a solid consistency and a cone-shaped form. This is precisely what they were like in the USSR. During the Soviet era, truffles were in high demand, but they were difficult to find. Therefore, many housewives learned to make these "Truffle" candies at home. The recipe called for using powdered milk or baby formula instead of cream.

Few people make it at home these days, and that's a shame – it's a wonderful opportunity to treat your family to something delicious, which is also natural, sugar-free, coloring-free, and free of the preservatives that keep store-bought candies on shelves and warehouses for years. You can make them for a children's table, a New Year's party, a birthday, or just because, for any occasion. These magnificent candies will leave no one indifferent!
Cooking truffles at home
Making chocolate truffles at home is easy. We'll use a classic recipe—with cream and dark chocolate, and we'll roll them in cocoa powder and coconut. Here's what you'll need:
- 200 grams of plums with 20% fat content.
- 200 grams of dark chocolate with a high cocoa butter content.
- 50 grams of butter.
- Cocoa.
- Coconut flakes.
Cooking steps
- Grate the chocolate bars.
- The resulting chocolate chips need to be melted. The recipe recommends doing this in a double boiler, but if you don't want to mess around with saucepans and pots, use a microwave. Place the chocolate in the microwave for no more than 30 seconds at full power.
- We take out the melted mass and stir it with a spoon.
- Pour the cream into a saucepan, place on the heat and bring to a boil.
- Add a piece of butter to the boiling cream. The recipe calls for stirring until the butter melts.
- Pour the melted chocolate mixture into the cream and stir thoroughly until all the chocolate has melted. Then remove the pan from the heat.
- Now the resulting mixture needs to be refrigerated. The recipe recommends keeping the pan with the mixture in the refrigerator for at least three hours.
- After this time, remove the chocolate mixture. It should be well set.
- Let's start forming our delicious truffles - grab the mixture with a spoon and roll it into balls.
- Carefully roll the resulting balls in cocoa on all sides.
- Lastly, roll the candies in coconut flakes. This step is optional, as the classic recipe doesn't include this ingredient.
Homemade truffles are ready! They're made according to a traditional recipe, and the resulting chocolate-cream mixture is the ganache. You can vary the flavor of the candies by adding raisins, nuts, or candied fruit. And if you add a little liqueur or rum, they'll acquire a subtle, piquant flavor. However, such a treat is certainly not suitable for children.
