Despite its sophistication, this dessert is quite possible to make in a regular kitchen, using common ingredients. And despite its fancy name and seemingly breathtaking photos, Semifreddo is quite simple to prepare. Before we share the recipe for this delicious treat, we'll discuss the best ingredients to stock up on.
Suitable ingredients
In addition to the main ingredients, Semifreddo is made with flavorings that define its core flavor: chocolate, nuts, mint, and more. Without any additives, Semifreddo has a classic, milky taste. While you can experiment with the flavorings based on your taste preferences, the recipe requires a certain strictness when choosing the main ingredients. These must include eggs and cream. Now, a little more detail about the ingredients chosen for this dessert.
The eggs used in this dessert must be fresh, and the fresher they are, the more delicious the Semifreddo will be. If the eggs are more than 10 days old, the product will no longer be suitable. It's even better if you use free-range eggs.
Our second ingredient is cream. This recipe requires careful consideration of this ingredient, especially if you want a truly delicious dessert. So, of course, it should be fresh, and definitely full-fat. Avoid 10% liquid cream, which is more like milk. Use at least 33% fat.
Now let's move on to the actual preparation of Semifreddo, its subtleties and nuances. So, here's the recipe.
The most delicious nutty Semifreddo
To prepare it we will need:
- Hazelnuts – 1 cup;
- Cream – 400 ml;
- Eggs – 3 pieces;
- Sugar – 1 glass;
- Water – 3 tbsp.
First, we'll prepare the caramel for our Semifreddo. To do this, pour plain water into a frying pan and add 150 grams of sugar. Wait until the sugar dissolves, stirring constantly to prevent anything from sticking to the bottom of the pan. Simmer the sugar and water until the caramel turns brown. It should be runny.
After this, leave the pan on and add the hazelnuts to the caramel. Be sure to roast them thoroughly first, or buy pre-roasted ones. Stir the hazelnuts into the caramel for a few minutes to coat them. Next, place the hazelnuts on a flat surface, such as a cutting board. Smooth them out and let them cool.
Next, take the eggs. Carefully separate the yolks from the whites. The recipe states that it's crucial to ensure that no whites get into the yolks. Add the remaining sugar (50 grams) to the yolks and begin whisking vigorously. Use a whisk to do this. Beat the yolks for 10-15 minutes. Don't be lazy and don't shorten the time, as this directly affects the deliciousness of your dessert.
Next, add the cream to the yolks. As mentioned earlier, the recipe calls for heavy cream; the higher the fat content, the better. After adding the cream, beat for about 15 more minutes. The mixture should roughly double in volume. This is a sign that you've read the recipe carefully and followed all instructions correctly.
Next, we move on to our egg whites. We beat them again, but this time with a mixer. They should be shiny, firm, stable, and fluffy.
Next, we need another kitchen helper: a blender. Use it to grind the hazelnuts until they're powdery. Once the nuts are ground, add the whipped cream and egg yolks. Top with the whipped egg whites. Use a whisk and mix everything very carefully: move the whisk in one direction and rotate the bowl as you go. If you do everything carefully, the dessert will be very tender.
Next, we carefully transfer our future dessert into pretty plates or bowls and place it in the freezer for about 40 minutes. The timing should be adjusted based on the power of your freezer.
