Broken glass dessert
A dessert that will delight both adults and children alike is Broken Glass Jelly. Of course, like most other sweets, it was invented in France. Today's dessert is not only very tasty, but also very healthy. Its enormous benefit lies in the fact that, thanks to the gelatin contained in the jelly, the dessert contains very beneficial amino acids, not to mention the benefits of fruit, if we are talking about fruit jelly.
To prepare our broken glass we will need the following ingredients:
- jelly, a pack of cookies, 1 pack of gelatin, 0.5 liters of sour cream.
To make our dessert, we use as much multicolored jelly as we want. We prepare each packet of jelly separately and let it cool.
Next, we move on to the gelatin. Take a packet and soak it, following the instructions on the back. Then place it on the stove and begin heating until it's completely dissolved. While the gelatin is cooling, mix the sour cream and sugar. It's best to use a mixer or blender for this; it'll be much quicker. Carefully pour the now-cooled gelatin into the whipped sour cream.
Take the cookies, break them up as desired, and add the chopped jelly. Mix everything together and place them in a deep pan. Top with the prepared mixture of sour cream, sugar, and gelatin. Refrigerate for a few hours until completely set. Once the broken glass has cooled, you can cut it and serve.
The choice of a deep container is determined solely by aesthetic perception; the dessert looks much better if it is not flat, but in the form of a slide.
Sponge cake
The Broken Glass cake will consist of two parts: sponge cake and cream.
To prepare the biscuit we need:
- 4 medium-sized eggs
- a glass of flour
- a glass of sugar
For the cream:
- 4 packs of jelly, preferably multi-colored, of course
- 250 ml whipping cream
- 250 ml sour cream, preferably with 40% fat content
First, separate the yolk from the white. Beat the separated whites at low speed with a mixer. Once foamy, gradually add the sugar and continue beating. The sugar should be completely incorporated into the whites. When the whites thicken, gradually add the separated yolks, continuing to beat.
We begin adding flour to the thick, whipped mixture. Sift the flour over a bowl, gently stirring it with a spoon from the bottom up. The dough is ready, and we can place it in the pan. For a fluffy, tall sponge cake, use a 21-23 cm pan. No need to grease the sides, but it's best to line the bottom with parchment paper.
Place the sponge cake in the oven preheated to 190-200 degrees Celsius (350-395 degrees Fahrenheit) for 20-25 minutes. To prevent the cake from falling, do not open the oven door until it's fully baked. Once the baking time is up, remove the pan and invert it onto a plate, wire rack, or towel. Let the cake cool. If the baking process was followed correctly, the result will be a tall, fluffy, and airy sponge cake that will serve as the perfect base for our cake.
Jelly for cake
Now we'll move on to the top of our broken glass cake—the jelly. Prepare the jelly using slightly less liquid than indicated on the packet; this will give it a firmer consistency. A little tip: if you're using strawberry jelly, set it a little later to set.
Take the cream and whip it into a thick foam. You can do this by hand, of course, but a mixer will be much faster. After this, add the sour cream to the cream and whip again. Then, without stopping whipping, add the strawberry jelly, which has just begun to harden, and mix everything thoroughly until a homogeneous mass is obtained.
We cut our frozen jelly from the remaining flowers into cubes, although you can also shape it into other shapes if you wish, and carefully add it, stirring lightly, into our creamy mixture.
Take a springform pan, place the cooled biscuit in it, spread our cream mixture on top, carefully leveling it on top, put it in the refrigerator for 2-3 hours, until completely cooled.
Afterwards, we pull out our finished dessert, remove the sides of the pan and cut it.
To make our cake not only delicious but also stunning, we'll decorate the top. Options include grated or hot chocolate, berries with mint leaves, caramel, or simply small candies.
Although the cake takes quite a bit of time to prepare, the recipe is well worth it. Besides, as we remember, jelly is very healthy, and in this case, it's also incredibly delicious. This cake goes well not only with tea or coffee, but also with spirits.
