Classic raspberry jelly
To make raspberry jelly at home, you need to prepare the following ingredients in advance:
- fresh berries – 1 kg;
- a glass of granulated sugar;
- water – 1 glass;
- citric acid – 2 g.
Method of preparation:
- To prepare this raspberry treat, first place the berries in an enamel pan and crush them thoroughly using a wooden rolling pin, the kind used to roll out dumpling dough.
- After this, pour water into the pan with crushed berries and stir the mixture using a non-metallic spatula.
- After this, place the container with the berries on the stove. The raspberry delicacy should boil. Skim off any foam that forms on the surface of the mixture and simmer over low heat for about ten more minutes.
- After the specified time, remove the mixture from the stove and let the mixture cool.
- Rub the resulting mass thoroughly through a sieve, then squeeze it through cheesecloth.
- The result should be berry juice, into which you need to add granulated sugar. Pour the mixture back into the saucepan, place it on the heat, and bring it to a boil.

- When the raspberry treat is ready, add the citric acid, stir thoroughly, and then remove the pan from the stove. Pour the dessert into pre-prepared and sterilized jars. Shallow containers are preferable.
- Leave the jars with berry treats open until they cool completely at room temperature.

Therefore, for every liter of raspberry juice, you'll need approximately 300 ml of currant juice and one kilogram of sugar.
