How to Bake Frozen Croissants
Before baking, remove frozen croissants from the freezer, place them 3-4 cm apart on a baking sheet lined with parchment paper, and let them rest at room temperature for 40-50 minutes. This will allow them to defrost and rise slightly. You can brush the tops with beaten egg yolk or milk.
Then place the baking sheet with the croissants in a preheated oven at 220 degrees Celsius (425 degrees Fahrenheit). Bake the croissants for approximately 18-25 minutes at 180-185 degrees Celsius (350-375 degrees Fahrenheit). The exact cooking time depends on the size of the croissants.
I don't recommend opening the oven door while baking to avoid disrupting the oven temperature, as this could cause the croissants to collapse. The finished croissants should be golden brown and easily peel off the parchment.
A simple recipe for making croissants at home
To make classic croissants, prepare:
- 4 cups flour;
- 0.2 cups cold filtered water;
- 50 g granulated sugar;
- 60 g butter;
- 0.5 cups milk;
- 1 tbsp dry yeast;
- 2 egg yolks;
- 0.5 tsp table salt.
Step by step process:
Step 1. First, you need to knead the dough: lightly beat 1 yolk with a fork or whisk, then add salt, sugar, water, milk and mix the ingredients well.

Step 2. Next, sift the flour into a large bowl and combine it with the yeast. Gradually add the egg mixture in a thin stream, kneading the dough. You can use a whisk or a mixer on low power for this.

Step 3. Knead the dough for 5–10 minutes, then wrap it in cellophane or cling film and put it in the refrigerator for 1.5–2 hours.

Step 4. After the time has elapsed, transfer the dough to a lightly floured work surface and roll it out into a not-too-thick layer (preferably a square). Top with chilled butter, finely grated.

Step 5. After this, fold the dough into several pieces, roll it out into a flat sheet, and form it into a square again. Repeat this process one more time, place the dough in a plastic bag, and refrigerate for another half hour.

Step 6. After the time has elapsed, roll the dough into a fairly thin, pliable, large square flatbread and cut it into even triangles.

Step 7. Roll the dough pieces into croissants, starting from the wide end, and carefully place them on a baking sheet, spacing them a few centimeters apart. Brush the tops with beaten egg yolk.

Place the pan in a preheated oven for 15 to 20 minutes. Bake the croissants at 200 degrees Celsius (400 degrees Fahrenheit) until they are golden brown.
