Puff pastry is quite popular in cooking because it allows you to create a wide variety of baked goods. You can make your own or use frozen puff pastry. In this article, we'll discuss how to bake puff pastry properly, at what temperature and for how long, to achieve delicious baked goods.
Important nuances of baking puff pastry in the oven
When baking, I recommend purchasing store-bought puff pastry. This will make things easier, as making it yourself can be quite challenging. Before baking both homemade and store-bought puff pastry in the oven, I recommend familiarizing yourself with a few nuances.
- To defrost, remove the finished dough from the freezer and leave it on the table at room temperature.
- Roll the sheet out in one of the chosen directions, making sure the rolled product is more than 3 mm thick, depending on the recipe. Better yet, gently stretch it out with your fingers in different directions until you reach the desired size.
- Use a sharp knife to cut the dough to prevent the edges from sticking together or becoming misshapen. A dull knife can crush the edges of the dough, causing it to be less fluffy after baking.
- After adding the filling, do not coat the edges of the pastry, otherwise they will stick together during heat treatment and will not be able to separate.
- If you are baking filled pastries, pierce them with a toothpick in several places before baking to ensure the dough is free of bubbles and bakes evenly.
- Line the baking sheet with parchment paper or lightly dust with flour. You can add a little water to the pan so that it evaporates, giving the pastry extra airiness.
- Before placing the baking tray in the oven, it must be preheated well.
Also keep in mind that yeast-based doughs expand during baking, so space them a few centimeters apart.

At what temperature and for how long should puff pastry be cooked in the oven?
The baking time and method for yeast and non-yeast dough depend on the weight of the dough and the type of kitchen equipment. Insufficient heat can result in uneven or incomplete baking. And too much heat can cause the top layer to burn. We'll explore these nuances in more detail below.
Yeast puff pastry
The exact cooking time and temperature for yeast puff pastry varies depending on the volume and weight of the dough, as well as the type of kitchen equipment you have.
For example, a product weighing 70–100 g will be ready in 10–20 minutes when baked in an oven at 240–260 degrees Celsius. Larger items weighing 500 g to 1 kg (pizza, pies) will take about 20–25 minutes to cook—first (about 10 minutes) at 230–250 degrees Celsius, then at 180–190 degrees Celsius.
Be guided by the capabilities of your oven and check the product for readiness after cooking.

Yeast-free puff pastry
Puff pastry baked goods also need to be baked for different times at different temperatures, depending on the thickness of the dough, the volume of the filling, and the type of oven.
So, small baked goods weighing 70–100 g are baked for about 20–30 minutes – first (about 10 minutes) at a temperature of 210–250 degrees, and then at a temperature of 180–190°.
Large items (200g to 1kg) will bake in 30-60 minutes at 220-230°C. You can also reduce the heat to 185°C after 12 minutes.
If you are going to make cookies, you will need no more than 15 minutes of baking at a temperature of 220 - 240 °.

How to bake different types of puff pastry products
Before baking, I recommend removing the dough from the freezer and defrosting it in the kitchen if you're using a pre-made product. Alternatively, knead it and let it rest for 20 minutes, covered with a lid or plastic wrap.

Homemade pizza
To prepare pizza you need:
- 250 g dough;
- 100 g sausage;
- 70 g cheese;
- 50 g of champignons;
- 5 – 10 g oregano;
- ketchup/sauce (to taste).
Step by step process:
- First, you need to prepare the filling: cut the sausage and mushrooms into the desired shape, grate the cheese.
- Next, roll out the dough to fit the baking pan (or sheet pan) and carefully place the resulting layer on the bottom. You can line the pan with parchment paper first. Then trim off any excess around the edges, if necessary.
- After this, generously coat the dough with the prepared sauce or ketchup and sprinkle with spices on top.
- The next layer is evenly distributed with pieces of sausage and mushrooms and sprinkled with grated cheese.
- Then place the product in a well-heated oven at 200°.
Pizza should be cooked for about 25 minutes (±5 min.) at 200 – 220°.

Croissants with chocolate filling
To bake croissants, you need to prepare:
- 400 g dough;
- 2 bars of chocolate;
- egg.
You can use any filling to suit your taste.
Step by step process:
- Roll out the prepared dough into a layer up to 5 mm thick.
- Then cut it into equal triangles, place 1-2 squares of chocolate on the wide part of each piece and roll into a crescent shape, tucking the long edges towards the middle.
- After this, place the pieces on a baking sheet, leaving a few centimeters between them to prevent them from sticking together, as they will expand during baking.
- Next, beat the egg in a separate small bowl and brush it over each croissant.
- Then preheat the oven well and place the ingredients in it.
Croissants should be baked for 5-8 minutes at 200-220 degrees, after which you need to reduce the heat to 175° and cook for about 12 more minutes until deliciously golden brown.

Sausages in puff pastry
Necessary components:
- 125 g puff pastry;
- 4 – 5 sausages;
- egg.
You can also add cheese and sliced pickles to the filling.
Step by step process:
- First, roll out the dough lightly. If it sticks, you can sprinkle it with a little flour.
- After this, cut the sausage into long, narrow strips and wrap each sausage in the dough, overlapping the product. I recommend sealing the edges to prevent the sausages from unrolling during cooking.
- Then transfer the sausages to a baking sheet lined with parchment paper or foil. Leave at least 2-3 cm between each sausage to prevent them from sticking together during cooking.
- In a separate shallow bowl, beat the egg and brush it over the top of the dough.
- Next, place the container in a well-heated oven (up to 180 degrees).
Bake the products for no more than 18 – 22 minutes at 190 – 200° until golden brown.

Pies with egg and onion
To prepare the pies you need to prepare:
- 500 g puff yeast dough;
- 6 boiled eggs;
- 1 bunch of green onions;
- 1 – 2 raw eggs (for greasing);
- 3 tbsp mayonnaise (optional).
You can choose any product to your taste as a filling.
Step by step process:
- First, lightly roll out the dough and cut it into equal squares. Cover them with plastic wrap and prepare the filling. Finely chop the eggs and rinsed green onions, then mix them together. If desired, season the mixture with salt and/or mayonnaise.
- Next, place 1–2 tablespoons of filling on each piece of dough and pinch the opposite corners together to form triangular-shaped pies.
- Then distribute the pieces on the baking sheet at a distance of 2–3 cm and brush the surface of each pie with beaten egg.
- After this, place the container in a hot oven.
The pies should be baked for 15 minutes at a temperature of 190 - 210 degrees until deliciously golden brown.

Apple strudel
To prepare strudel, you need to prepare:
- 2 sheets of puff pastry;
- 3 apples;
- 20 g each of flour and breadcrumbs;
- 80 g granulated sugar;
- 100 g ground nuts;
- egg;
- 0.5 tsp ground cinnamon.
Step by step process:
- First, I recommend washing, peeling and chopping the apples into small cubes.
- Transfer the resulting mixture to a large bowl, add 40 g of sugar, flour, and cinnamon, and combine the ingredients. Let the mixture sit in the kitchen for 20 minutes to allow the fruit to release its juices.
- In a separate bowl, combine the nuts with the remaining sugar and breadcrumbs.
- Then place both layers of dough on parchment paper, roll them out lightly and sprinkle evenly with the nut mixture.
- After this, add the apple filling and carefully roll the dough into two rolls, securing the edges.
- Next, place the pieces on a baking sheet lined with parchment paper, seam side down.
- Brush the surface of the dough with beaten egg, which should be mixed with a teaspoon of cooled boiled water.
- Then make several transverse cuts on the rolls with a well-sharpened knife and place the baking sheet in a hot oven.
Strudel should be cooked for at least 20 minutes at 200–210°C until golden brown.

Napoleon
Necessary components:
- 2 sheets of yeast dough;
- 1.2 l of milk;
- 3 eggs;
- 400 g granulated sugar;
- 100 g flour;
- 1 packet of vanillin;
- 100 g butter.
Step-by-step cooking process:
- Place the dough on a baking sheet lined with baking paper without rolling it out.
- Then place it in a well-heated oven at 190°C. Bake the puff pastry for about 15–20 minutes.
- After the time has elapsed, remove the product from the oven and leave it for a while to cool.

- After this, remove the top toasted layer, which will be used to make the crumble, and carefully separate each layer into 3 parts with your hands.
- Next, it's time to prepare the cream. To do this, bring 1 liter of milk to a gentle simmer in a saucepan over medium heat, being careful not to let it boil over.
- Then pour 200 ml of the remaining milk into a large bowl, add sugar, eggs, vanilla, and flour, and mix thoroughly until smooth. It's best to use a hand mixer.
- Pour the resulting mixture in a thin stream into a saucepan with heated milk.
- While stirring continuously, bring the mixture to a boil and cook until thickened at minimum heat, stirring constantly.
- Next, cool the prepared cream to room temperature, covering it with cling film, and then thoroughly mix it with softened butter.
- Then generously spread each layer with cream, shaping the cake on a flat plate. Sprinkle the top and sides of the dessert with crumbs made from the top layer of baked dough.
Leave the Napoleon for a few hours to soak.

Pies, buns and samsa
You can choose any filling for the pie. This product should be baked for approximately 20-40 minutes at 210-220 degrees Celsius, taking into account the thickness of the pie, the volume of the filling, and the type of oven.
Buns and samsa will be ready in 15-20 minutes at a baking temperature of 190-200 degrees.
How to Bake Puff Pastry in the Microwave
Puff pastry can be baked in either the oven or microwave using a standard baking mode at 800W or higher. This will require significantly less time (10 to 20 minutes), depending on the thickness of the pastry and the type of microwave oven.
To properly prepare this product, you should familiarize yourself with some of the cooking nuances:
- For this, you should use a heat-resistant dish with high sides, since the dough will rise quickly when heated.
- Lightly dust the baking pan with flour or line it with parchment paper, but do not grease it.
- Microwave puff pastry cooks quickly, but this method prevents it from browning. Therefore, I recommend setting the microwave to broil for 2-3 minutes after baking.
- Do not cover the pan with a lid.
Don't remove baked goods from the microwave immediately; leave them in the microwave for a little while longer with the appliance turned off. It's best not to open the door during this time.

Making puff pastry with or without yeast isn't difficult at all. The key is to follow the recipe and the recommended baking guidelines. Avoid opening the oven door or other kitchen appliances during baking to ensure the product remains airy and bakes evenly.
