How long do cupcakes (with or without frosting) and muffins last? Can they be frozen in the refrigerator?
Content
While we all know there's nothing more delicious than freshly baked goods, sometimes life requires spreading out your muffin-making over several days, saving a fresh batch for later, or preserving leftovers. To ensure muffins and cupcakes retain not only their freshness but also their delicious flavor, many factors must be considered. After all, no one wants to prepare a dessert in advance only to have it dry out or lose its flavor by the time it's served.
Today I'll tell you how to properly store muffins and cupcakes, with and without filling, and how many days and at what temperatures the baked goods retain their original taste and texture.
Shelf life of cupcakes and muffins
When choosing the shelf life of cupcakes and muffins, it's important to understand that much depends on the type of baked goods, as well as their filling.
Here are some basic rules for storing cupcakes and muffins:
- Cupcakes and muffins without frosting or filling can be refrigerated for up to 5 days. The time count begins after the cakes are baked and cooled to room temperature.
- Since cupcakes, unlike muffins, are small cakes with cream decorations or fillings containing dairy products, their shelf life in the refrigerator is reduced to 72 hours.
- To extend the shelf life of your cakes, place them in the freezer. Depending on the cream filling, frozen cakes will keep for anywhere from 30 days to 4-6 months.
- Before storing, be sure to place baked goods in an airtight container. This will prevent muffins and cupcakes from drying out and will also protect them from odors.
How to store muffins and cupcakes without frosting?
Most homemade baked goods without frosting can be stored at room temperature for one to two days. To maintain freshness, store muffins and cupcakes in a sealed, airtight container. If you don't have an airtight container, simply cover them with several layers of plastic wrap.

If you need to extend the shelf life, refrigerate the baked goods. At 3-5°C (37-41°F), unfilled muffins and cupcakes can be stored for up to one week. To prevent drying out, place the baked goods in a container and wrap them in plastic wrap or foil for a better seal.
How long do cupcakes with cream last?
If you're planning to store cupcakes decorated with a frosting, then completely different rules apply.
Store these baked goods exclusively in the refrigerator. The maximum shelf life is 72 hours. If the dessert is made with cream and is made with natural cream without preservatives, such as cream cheese frosting, the shelf life is reduced to 36 hours.
To keep decorated cupcakes soft for as long as possible, store them in the box they came in. If they're baked properly, their flavor and texture will stay fresh for several days. If you don't have a box, use an airtight container or cake storage tub.

Cupcakes with fondant or fruit decorations can be simply wrapped in plastic wrap directly on the plate. Just be careful not to damage the decoration.
Video: How to store biscuits and fillings?
In this video, an experienced cook and host of the YouTube channel "Pastry Courses" will explain in detail how to properly store sponge cakes and non-cream fillings in the refrigerator and freezer. While this information isn't specifically related to the baked goods discussed in today's article, it will still be useful for home cooks. After all, sponge cakes are similar in texture and composition to muffins, cupcakes, and cakes, so the packaging and storage conditions for these baked goods are virtually identical.
With the tips in this video, you can bake the base for your future cakes in advance, then simply prepare the fresh cream and serve the delicious dessert.
Can you freeze cupcakes and muffins?
Want to extend the shelf life of your cupcakes to 30 days? It's easy, as most cupcakes and muffins freeze well, especially those without fillings or frosting. If your cupcakes are already frosted or filled with frosting, they can also be frozen.

As for the freezing process, it is quite simple:
- If the cake doesn't have a frosting, simply wrap it in plastic wrap or foil. This airtight packaging will ensure that the cake doesn't dry out in the freezer. Remember that muffins and cupcakes don't harden in the freezer, so handle them carefully to avoid crushing them with other foods.
- Just because a cupcake has a frosted top doesn't mean you shouldn't store it in the freezer for a long time. Any cupcake with filling can be placed in an airtight container and frozen. You can freeze this treat for up to a month, but remember this only applies to freshly baked cupcakes.
For maximum freezing efficiency, cool the cupcakes at room temperature after baking, then refrigerate for a few hours, then transfer to the freezer in an open container. Cover the cupcakes only after they've cooled completely. This freezing method will prevent condensation from forming, which can turn into ice crystals, and will keep your cupcakes looking their best!
Before using, defrost baked goods for 20-30 minutes at room temperature. Muffins and cupcakes are typically served at 8-12 degrees Celsius.
And one more important point: eat defrosted muffins or cupcakes on the same day you take them out of the freezer!
