Average salary of a pastry chef in Russia

When officially employed
When it comes to the format of official employment, the salary amount is influenced by:
- qualifications (what education did the pastry chef receive, do they have any additional education diplomas, etc.);
- rank (gradually increased from 1 to 6 with the acquisition of experience and regular completion of additional training courses);
- region and city of residence (salary levels in different regions of the Russian Federation vary significantly in different fields, and confectioners are no exception);
- place of employment (in state-owned enterprises salaries are usually below average, while private confectioneries are willing to pay experienced specialists significantly more);
- the complexity of the processes performed (the more complex the tasks that a pastry chef performs while working in production, the higher his salary will be).

When working as a pastry chef at home
To understand how much a home-based pastry chef earns per month, it's worth considering several other factors that influence income level:
- region of residence (for example, starting a business in the village preparing exclusive expensive desserts is not advisable);
- qualifications (income level increases: exclusive design, implementation of technically complex recipes, fulfillment of exclusive orders);
- equipping a home bakery (it will be impossible to implement complex recipes without expensive equipment);
- the amount of work and time that a person is willing to devote to completing orders;
- scale of production (sometimes cake makers take on several assistants, increasing production volumes and, accordingly, increasing their income);
- the ability to form correctly the price of cakes, make precise calculations of ingredients, make preparations;
- the desire to develop your business and develop yourself as a specialist.

Seasonality is also worth considering. Experienced self-employed bakers will tell you right away that you can't compare how much pastry chefs earn in the lead-up to the holidays with how much they earn during the so-called "off seasons." For example, before the New Year, even a baker who's just starting out can easily earn 100,000 rubles, while in other months, it can be difficult to secure enough orders to reach a net profit of 30,000 rubles.

Those who have tried their hand at the confectionery business but haven't achieved a high income level within Russia often wonder how much confectioners earn abroad, and whether there are prospects for developing this business abroad.
By analyzing job offers from foreign companies, we found out how much officially employed pastry chefs are paid in different countries:
- In Germany, a pastry chef can expect an income of 3,880 euros per month;
- in France – about 3000 euros;
- In China, the average median is 1,275 yuan;
- In the US, the figure will vary greatly depending on the region (in Orlando, pastry chefs earn around $1,800, in Los Angeles – $2,850, and in Boston over $3,000);
- for Belarus the figure is fixed at 2,200 Br per month, but can vary from 400 to 4,000 Br;
- Working in Kazakhstan, a pastry chef will receive approximately 179,900 KZT.

The information is based on the beginning of 2024 and reflects the earnings of pastry chefs officially employed in the country. A private entrepreneur's income can be significantly higher, but only if the business owner is well-versed in local laws and the preferences of people living in a given country.
