Next, we'll discuss how to store various desserts containing whipped egg whites at home, as well as how the preparation method and external factors affect shelf life.
Standards according to GOST

There are different methods to extend shelf life:
- thermal processing of the product (a striking example is drying meringue);
- adding sugars;
- lowering the temperature (storage in the refrigerator or freezing);
- excluding proteins (as in marshmallows);
- replacing “live protein” with albumin (reconstituted dry protein);
- the use of preservatives.
Expiration dates and storage features
How long a dessert can be stored depends largely on the recipe. Each dessert has its own expiration date and storage requirements.
Meringue
Depending on the recipe and cooking principle, a distinction is made between:
- French meringue - the egg whites are whipped with sugar or powdered sugar;
- Italian meringue - egg whites are whipped with hot sugar syrup;
- Swiss meringue - the egg whites are beaten with sugar and then steeped in boiling water.

The optimal storage conditions for meringues and desserts with soft protein cream are an airtight container and a refrigerator temperature of (+4..+7℃).
The shelf life depends on the temperature conditions:

Meringue
The shelf life of meringues largely depends on the degree of drying of the product.
- If the meringue is completely dry (crispy and crumbly), then the shelf life of the dessert, even at room temperature, is 2 months.
- The wetness of a meringue (the center remains raw and stretchy) is determined by the type of meringue used (see table above).

When preparing for guests, you can safely place a beautiful bouquet of crispy meringue on a stick on the table in advance.

The answer to the question of how long meringues can be kept in the refrigerator may surprise novice cooks, as the product can spoil very quickly in such conditions. The problem lies in the high humidity of refrigeration compartments and the condensation that forms inside the bag or container due to the frequent opening and closing of the refrigerator and the resulting temperature fluctuations. For dry meringues, any contact with moisture is detrimental! Not only does the appearance and taste of the product suffer, but remember that soggy areas of the cake are an excellent breeding ground for pathogenic microflora.
Marshmallow
Marshmallows are stabilized without exposure to high temperatures, so the shelf life of this homemade treat is short.

*It is better to freeze marshmallows made with pectin rather than agar, since the agar mass loses its original texture after defrosting.

- Store marshmallows at room temperature (condensation in the refrigerator will quickly spoil the product);
- attach the marshmallow bouquet as a cake decoration before serving;
- If you plan to make marshmallow cake ingredients for freezing, use recipes with pectin.
Marshmallow
Thanks to a special preparation technology, this dessert can be stored in an airtight container at room temperature for up to 1 month.

Features of store-bought desserts
If you look at the shelf life of meringues or marshmallows sold in supermarkets, you will see that their shelf life significantly exceeds the terms established for sweets made at home.
The recommendations for storing store-bought marshmallows or meringues at home after opening the sealed packaging are the same as those described above. Keep away from:
- temperature changes;
- condensation formation;
- moisture ingress;
- chapping.
Recommendations for storing marshmallows at home for a long time often recommend freezing them. Indeed, store-bought marshmallows can be frozen, as highly effective thermoreversible pectins are used in industrial settings.
