With dark chocolate and cottage cheese
This chocolate cake with curd balls is sure to please both adults and children. What's more, this treat is not only delicious but also healthy. So, to make it yourself, prepare the following ingredients in advance:
- 2 tablespoons flour;
- A pinch of salt;
- 50 g dark chocolate;
- Half a teaspoon of baking powder;
- 2 tablespoons vanilla sugar;
- 120 g sugar;
- 4 tablespoons cornstarch;
- 250 g cottage cheese;
- 6 chicken eggs;
- 3 tablespoons cocoa;
- 50 g coconut flakes.
First, let's make one of the most essential ingredients, essential to any chocolate-curd cake: the curd balls. Place the curd, 2 tablespoons of starch, 50 grams of sugar, and two egg yolks in a small bowl. Mix all of these ingredients thoroughly until smooth and even. Next, take a round baking pan and line it with parchment paper. Grease it with a thin layer of butter. Then, carefully spread the curd, using wet hands to form balls. Because the curd is soft, you won't get perfect "balls," but that's okay, so don't worry. Spread the balls evenly over the entire surface of the pan.
Next, take the remaining four eggs. Separate the whites from the yolks again. Place the yolks in a small bowl, add vanilla sugar, and 30 grams of regular sugar. Mix everything thoroughly, then lightly whisk until a bubbly, pleasant mixture forms.
Now let's move on to the chocolate, because we're making a chocolate cake. We need to melt it. We do this in a double boiler: break the chocolate into a small bowl and place it over a pan of simmering water. Stir the chocolate and let it simmer until it turns into a liquid.
Use dark chocolate for this cake because it doesn't contain any additives. Milk chocolate and other chocolates contain various additives that can cause the chocolate to curdle or form flakes instead of melting. So, after melting the dark chocolate, mix it with the egg mixture.
Next, place our dry ingredients in a separate bowl: salt, cocoa, baking powder, flour, and starch. Mix everything thoroughly. Add the dry flour mixture to the bowl with the chocolate-egg mixture. Mix everything thoroughly until the mixture forms a smooth mass.
After completing all the previous steps, you should be left with 4 egg whites and 40 grams of sugar. Place them in a bowl or mixer bowl and beat very well at high speed. The end result should be an elastic, springy mass that forms stiff peaks.
We carefully fold the egg whites into the chocolate mixture. This must be done with extreme caution to avoid spoiling their softness and airiness. Mix in several stages, using smooth movements from top to bottom. Despite the gentleness, it's important to mix thoroughly to ensure the mixture is completely smooth. The result is an incredibly soft chocolate dough. Pour this dough into the curd balls.
Next, preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Place the cake in there for about 40 minutes. Remove the finished chocolate-curd cake and let it cool on a wire rack.
Cake icing
To make this treat even more delicious, let's make some icing. For it, we'll need:
- 2 tablespoons sour cream;
- 3 tablespoons of sugar.
- 2 tablespoons cocoa;
- 1 tablespoon butter.
Place the butter in a saucepan and melt over low heat. Then add the sugar, cocoa, and sour cream. Stir until everything forms a smooth mixture. Cook, stirring constantly, until the glaze begins to thicken. Then drizzle this delicious icing over our chocolate-curd cake.
