- a ready-made pie, decorated with whipped cream, stays fresh for only 6 hours;
- A pie decorated with fresh meringue can also be stored for no more than 6 hours (if the protein is additionally dried in the oven, it will definitely “live” no less than a sponge cake with apples).

Sponge cake itself is very sensitive to any strong aromas. It easily absorbs foreign odors, which can significantly affect the taste of your cake. That's why it's always important to store sponge cake in an airtight container.
Depending on the expected shelf life and temperature conditions, you can use:
- sealed container;
- cling film;
- plastic bag.
Ways to store apple pie
Now let's talk about the best place to store the apple charlotte after baking.
At room temperature
If you've just baked a charlotte in the oven, but guests are arriving in a few hours, don't rush to refrigerate it. A cooked and naturally cooled charlotte will store perfectly well at room temperature, simply covered with a towel. You can also leave the pie in the baking pan for this period, removing it just before serving.

You shouldn't leave the charlotte out of the refrigerator for more than 5-7 hours, as bacteria can start to multiply quite quickly in the sweet fruit environment.
In the refrigerator
At temperatures between 5 and 7°C, the shelf life of a fruit sponge cake extends to 5 days. Knowing how long a charlotte cake lasts in the refrigerator allows you to bake it in advance if you plan to make a sweet dessert with it. If you later reheat the charlotte cake from the refrigerator and top it with cream, fresh fruit, jelly, ice cream, and other ingredients, no one will know it was made in advance.
The rules for storing charlotte in the refrigerator are the same as for classic sponge cake:
- Tightness of the packaging (to prevent the appearance of foreign odors).
- Product proximity (you shouldn’t keep the pie next to strong-smelling products).
- Lack of decoration.

In the freezer
Naturally, you may be wondering: is it possible to freeze charlotte if you need to preserve it for a longer period?

Apple pie can be frozen, but after defrosting, the fruit may release liquid, and the dough itself will change texture. The secret to freezing sponge cake is largely that after a period of freezing, the layers are used to make cakes, coated with cream, which permeates the porous texture, hiding the imperfections caused by freezing. Charlotte cake, on the other hand, is eaten on its own, so the texture change will be obvious.
It's also worth considering that, on an industrial scale, special dry-blast freezing units are used to freeze confectionery products, the operating principle of which differs significantly from freezing in a domestic freezer.
